Ancients is a blend of Grenache and Carignane from vines aged between 80 and 100 years old. The yield per vine is less than a kilogram. We like to use a high percentage of Carignane in the final blend which, due to it’s natural high acidity, lends both crispness and freshness to the wine as well as long life.
Limited production: 1000 bottles of 750mL and 700 magnum
Opaque ruby-colored. Aromas of ripe red fruits (black cherries, cassis and blueberry) with aromatic herbs and balsamic background from barrel aging. In the mouth, the wine is rich with an intense fruit of dark cherries. The finish is long and well balanced thanks to the natural freshness and minerality.
79% Carignane, 21% Red Grenache.
Excellent with roasted meats.
Total Acidity: 5.2 g/L
Fermented in stainless steel fermentors at 20-24º C over a period of 10-12 days with additional skin maceration of 5-8 days depending on the varietal and the conditions.
Malolactic fermentation and aging is done in 300L, new and used French oak (both allier and nevers). Total wood contact time for this wine will vary between 14 and 18 months. The Red Grenache is only aged in used wood (usually 3-4 year old barrels) to preserve it’s delicate aromas and varietal character.
Properly cellared, this wine will continue to improve over the next 10 years.
We strongly advise decanting the wine at least 30 minutes before serving. Suggested wine temperature: 15-17 ºC.
